Vanilla Wafer Apple Dessert

Recipe Source: Snack Picks

4 Fuji apples (peeled, cored and sliced)
1/2 cup granulated sugar (divided)
1/4 cup of butter melted
1 tsp cinnamon
1 tsp  grated lemon peel
1 TBSP lemon juice ( I used the juice from half a lemon)
approx 50 vanilla wafer cookies crushed (I put mine in the food processor)

Preheat your oven to 350 degrees. IN a small bowl combine the crushed cookies with 1/4 cup of sugar . Then add 1/4 cup of melted butter.
In another bowl combine the apples with lemon juice and toss well.
In another small bowl combine 1/4 cup of sugar with 1 tsp of cinnamon and 1 tsp lemon peel.

In a 8x8x2 dish layer half of the apple mixture, then sprinkle half of the cinnamon mixture, then sprinkle half of the cookie mixture and repeat.
Cover tightly with foil and bake in the oven for 30 minutes. Then uncover it and bake an additional 15 minutes or until crisp. serve warm (and with some yummy ice cream too)!

Holy Cow this stuff is AMAZING!!! It isn't overly sweet (which I like) and was voted the best dessert I have ever made by the ones in my household. Try it, it's sooooo easy!
