A Few Good Recipes (part 2)

I love to try out new recipes. It seems lately I have tried at least 2 new ones each week. Here are two that I made that ordinarily would never make it's way into our home but these recipes are safe for Rascal to eat.

Homemade Granola Bars

Ingredients
  • 6 cups Rolled Oats (not Quick Oats)
  • 4 Tablespoons Butter, Melted, Plus More For Greasing
  • 1/4 cup Vegetable Or Canola Oil
  • 1 teaspoon Salt
  • 1 cup Brown Sugar
  • 1/2 cup Honey
  • 1/4 cup Apple Juice
  • 1/4 cup Molasses
  • 3 teaspoons Vanilla Extract
  • 1-1/2 cup Rice Krispies
  • 1 cup Wheat Germ
  • 1/2 cup Finely Chopped Pecans (I left these out)
  • 1/4 cup Roughly Chopped Almonds (I left these out)
  • Milk Chocolate Or Chocolate Almond Bark, Melted (optional)

Preparation Instructions

Preheat the oven to 350 degrees F.
In a bowl, toss the oats with the canola oil, melted butter and salt. Spread the mixture out on 2 baking sheets and toast in the oven for 15 to 20 minutes, shaking the pan twice and making sure they don't burn. Remove from the oven and set aside.
Reduce the heat to 325 degrees F.
In a medium saucepan, combine the brown sugar, honey, apple juice and molasses. Heat the mixture slowly, stirring until all combined. Stir in the vanilla.
Toss together the toasted oats, rice cereal, wheat germ, pecans and almonds. Pour in the sugar mixture, stirring as you pour. Toss to combine; it will be sticky!
Press into 1 baking sheet (thoroughly greased with butter, or line pan with foil and grease foil) and bake until golden, about 20-25 minutes. Remove from oven and let cool. Cut pieces with a sharp knife and remove from the pan.
OPTIONAL
Dip the cooled granola bars straight into the melted chocolate so that the top is plain and the bottom is chocolate-covered. Set on parchment until set, sticking in the fridge to hasten this along if necessary.

** I left out the nuts to make them safe for Rascal and instead of dipping the cut bars into the chocolate I drizzled melted chocolate over the top and then cut them into bars (much quicker and not as messy)
THESE ARE INSANELY GOOD!!! They are crunchy and not chewy which means you could crumble them up and put it in yogurt or add milk and make a cereal. And you could try so many different options like adding dried fruit, drizzling carmel on top and the options could go on. Try them!!


Homemade Twix Bars

1 stick (4 ounces) butter, at room temperature
1/2 cup powdered sugar
1 teaspoon vanilla
1 cup flour
10 ounces caramels, unwrapped (I used 35 Kraft Caramels)
1 tablespoon, plus 1 1/2 teaspoons heavy cream
8 ounces milk chocolate
1 1/2 teaspoons vegetable shortening (I used vegetable oil), optional

Preheat oven to 300ยบ. Line 8 x 8 inch pan with nonstick foil or greased regular foil.

Beat together butter, sugar and vanilla. Add the flour. Press evenly into pan...you may need to flour your fingers to prevent sticking. Prick crust with fork. Bake 35-45 minutes till crust is golden.

Immediately after removing crust from oven, run knife around edges to loosen crust. Cool completely.

Melt caramel and cream gently in microwave or in saucepan over low heat till smooth. Pour over cooled crust and chill for 30 minutes.

Gently melt chocolate in microwave or in double boiler over low heat. Add shortening or oil if too thick to pour. Pour over chilled caramel and spread to edges. Chill till chocolate is well set. Cut into squares to serve. Store covered in refrigerator, but remove a few minutes before serving.

 
** Rascal can't have real Twix bars since they are made in the same facility as nuts. So when I came across this recipe I knew I had to try it. These were SO GREAT....... much better than an actual twix bar. The only thing I may try next time is adding a little more heavy cream to make the caramel softer.
