~ Our garden is doing AWESOME! I think we have beginners luck. I took a count last night and we have 43 tomatoes, so many jalapenos I can't count them all (we have harvested 4 so far), our squash plant has tons of blooms and one little squash, our green bell peppers have 3 peppers on them and our cabbage looks better but I don't expect it to make it to our dinner plate....something else is eating it. I am so impatient waiting for our tomatoes to ripen. Why can't they be red already??
~ My boys were invited to a friends VBS this week but after day 1 they chickened out since they didn't know anyone. Scooter's friend is 2 years older so he was in a class with out any friends and Rascal had his friend in his class but was still shy and not comfortable in a new surrounding. I was kinda hoping to get my house cleaned while they were at VBS but now I must do it with all 3 kids under my feet. I think you know how that is going to go......
~ I have sensitive skin. It isn't fun at all. Certain soaps break me out in a rash and/or hives. It takes nothing for my pores to clog and so therefore I am careful what lotions, make-up, face wash etc... I use. I have finally found that Bare Minerals is the best make-up for me, lever 2000 is the best soap, unscented moisturizers for sensitive skin is the best lotion (although I can tolerate Victoria's Secret scented lotions) but I have yet to find a good sunscreen. I went before our lake trip to get some and man sunscreen can be EXPENSIVE! I thought maybe this time would be different and just bought the the cheapest sunscreen I could get. Well now...... I am covered in a itchy rash that I assume is from the sunscreen. If you have a good sunscreen for sensitive skin please tell me!!
~ Ticks are HORRIBLE this year. Poor Henry roams through the woods and was covered with them about a month ago. So many it made his hair start falling out. Scooter went out one day to feed the dog and from the time it took to walk out feed the dog and then come back he had one on him. Yesterday I found two crawling up the wall INSIDE my house. Are you kidding me?? We even sprayed the outside perimeter of the house this spring. We have stocked up on OFF and I just hope that the spray does indeed repel them.
~ Along the lines of bugs outside.....Have you ever heard of no seeums? I promise it is a bug and not just a made up name. Google it. They are these tiny biting flies that you can't see and their bite is horrible. It itches worse than a mosquito bite and last for up to 2 weeks. Scooter and Rascal have had them so bad that their bite swells up and makes a huge knot. The reason I know that it isn't a mosquito..... the boys will get the bites in places that have been covered by clothing (to be vague). At first they were around the waistband of their pants and socks so I thought they were chiggers but after googling for a bit, I crossed that off the list. Then I somehow happened upon a site about no seeums and everything started clicking. That was what was biting them. So now we not only spray their legs and arms with off, we are spraying the opening of their clothing with off in hopes that will keep them away.
~ We grilled out last night for several meals and man was that ever so nice! I have at least meals already cooked and ready to just be heated and served for the week! I found a few recipes I had pinned on Pintrest and we tried them out. The hamburgers were SO GOOD, the zucchini was SO GOOD, and the chicken (which we haven't ate yet) smelled WONDERFUL! Here are a few of the recipes:
The Best Burger Recipe Ever
ground beef (I used 2 pounds)
buns
1/2 cup of grated Monterrey jack cheese
1/4 cup BBQ sauce
season salt to taste
cracked black pepper
onion powder
buns

I mixed all the ingredients together and patted them out into hamburgers. Then we grilled them using hickory wood chips too. Tim gave these burgers two thumbs up, Rascal gave it 2 thumbs and 2 feet up (he is such a goof) and Scooter loved every bite of his. Tim is a fan of plain grilled burgers and I kinda expected him to say they were good but he prefers his normal plain burger. I was wrong.... He LOVED these. We will have to remember this for the next time. And for those of you wondering... it DOES NOT taste like BBQ sauce. I was a bit afraid it would but not at all. The BBQ sauce just added the right amount of seasoning. Here is where I found the recipe:
Chili Maple Glazed Chicken
1 1/2 Pounds Chicken Pieces -- (4 to 6)
2 tablespoon water
1 teaspoon salt
1 1/2 tablespoon maple syrup
1 tablespoon chili powder
2 tablespoon water
1 teaspoon salt
1 1/2 tablespoon maple syrup
1 tablespoon chili powder
I used 4 fresh chicken breasts and put them in a gallon sized bag. I mix all the ingredients together and then poured it in the bag with the chicken mixing it all around really good until chicken was fully coated. Then I placed the bag in the fridge for a few hours to marinate. We took it out and grilled it and man did it smell SO GREAT! You need to try this! Zucchini and Tomatoes
2 sliced zucchini
4 smashed garlic cloves (I used the minced garlic in a jar and only used 1 teaspoon, we don't like a lot of garlic)
olive oil (I used about 3 or 4 tablespoons)
basil (I just poured some in until it felt right)
Salt and pepper to taste
Toss 2 sliced zucchini, 2 diced tomatoes, 4 smashed garlic cloves, olive oil, basil, and salt and pepper on a sheet of foil. Form a packet. Grill over high heat (we have a charcoal grill so Tim just put it on the top shelf of the grill), 10 minutes (it took a bit longer on our charcoal grill). Top with grated Parmesan.
This was SO easy and SO yummy! My kids turned their nose up at it when I told them what it was but once they tried it, they ate it all and asked for more! That means it is a winner for sure! If only we would have plated zucchini in our garden........we may try it with yellow squash too.
